Craftmans Dinner - Cindy Bissig x Tsukinokatsura

From April 1 through April 30, 2026, Ace Hotel Kyoto will present 'Beyond Sake', a long-term photographic project by Japan-based sake professional and writer-photographer Cindy Bissig. The project documents craft communities through an intimate focus on sake breweries and the people who sustain them. By observing daily labor, shared environments, and the transmission of knowledge across generations, the work highlights the collective life behind sake production. Through this perspective, Beyond Sake offers insight into a living cultural practice that continues to evolve while remaining deeply rooted in Japanese tradition.

As part of it, a special 'Craftsman's Dinner' in collaboration with Tokubee Masuda Shoten will be held on the closing night at Kosa. An intimate 6-course sake pairing dinner with both the photographer and the CEO of the brewery joining for this very special event.
